Summer is all about experimenting with in-season ingredients and creating new flavors from scratch. If you love Hawaiian-inspired dishes, you’ll love this tasty recipe with marbled ribeyes in a tangy pineapple marinade! Here’s how to make it:
- 4 cups pineapple juice
- 1 cup soy sauce
- 10 tbsp apple cider vinegar
- 4 tbsp toasted sesame oil
- 1 cup sugar
- ⅔ cup chopped white onion
- 2 pieces ginger, peeled & finely chopped
- 4 ribeye steaks (1 inch thickness)
- Butter (for garnish)
- Pink Himalayan salt (to taste)
Whisk together the liquid ingredients (pineapple juice, vinegar, soy sauce, and sesame oil) and sugar in a bowl. Stir in the chopped onion and ginger, then set aside.
Pour the pineapple marinade into a glass pan and place the steaks on top, sealing with plastic wrap or a tupperware top. Marinate in the fridge for 1-2 days, flipping the steaks once.
Remove the gourmet steaks from the fridge and place them on a plate, allowing the marinade to drain. Once the steaks have reached room temperature, place them on the grill at high heat for approximately five to eight minutes (or until your desired steak temperature).
Pull the steaks off the grill and let rest for a few minutes before serving. Garnish with a dollop of butter and lightly season with pink Himalayan salt to serve.
Balsamic Steak Salad
There’s nothing like a refreshing steak salad on a hot summer day, and we’ve got the perfect recipe that’ll have your mouth watering. If you’re craving a nice mix of fresh veggies and premium steak grilled to perfection, try this balsamic steak salad recipe:
- ¼ cup balsamic vinegar
- ¼ cup extra virgin olive oil
- 2 tsp fresh lemon juice
- 1 tsp minced fresh thyme
- ¼ tsp freshly ground rock salt
- ⅛ tsp freshly ground pepper
- 1 beef top sirloin steak
- 9 oz mixed salad greens (e.g. baby spinach, arugula, and leaf lettuce)
- 1 cup halved cherry tomatoes
- 1 cup chunked cucumber
- 4 radishes, thinly sliced
- ¼ red onion, thinly sliced
- ½ avocado, thinly sliced
- ¼ cup dried cranberries
- ¼ cup roasted pine nuts
- ½ blue cheese crumbles (gorgonzola and feta are good alternatives)
Whisk together the balsamic vinegar, olive oil, lemon juice, thyme, salt, and pepper in a small bowl. Pour ¼ cup of the dressing into a glass pan, placing the steak on top and returning the rest of the dressing to a sealed container. Cover the steak with plastic wrap and refrigerate overnight, turning the steak over halfway through.
Remove the steak from the pan and rest it on a plate until room temperature is reached. Preheat the grill to medium heat, then place the steak on the grill and turn until the desired temperature is reached.
Place the steaks on a plate to cool, then begin preparing the salad. Slice the cherry tomatoes, radishes, cucumber, red onion, and avocado, then place them on top of the greens. Slice the steak and place the strips on top, then garnish with the dried cranberries, pine nuts, and blue cheese. Serve with the remaining balsamic dressing.
